Legare insieme solo i gambi con uno spago e  farli bollire in acqua salata. Nel frattempo soffriggere nell'olio l'aglio tritato e aggiungere la pancetta e le punte di asparagi con sale e pepe. Unire un pò d'acqua bollita precedentemente con i gambi e far cuocere per almeno 20 minuti. Togliere i gambi dall'acqua e cuocere le pappardelle nella stessa acqua. In una terrina sbattere le 2 uova con un pizzico di sale, pepe e parmigiano. Scolare le pappardelle, saltarle nel composto di pancetta e asparagi e aggiungere le uova sbattute. Mescolare tutto, riempire i calamari e chiudere la parte aperta con degli stuzzicadenti. Far riscaldare l'olio nella padella, unire aglio e prezzemolo tritati e metterci i calamari. A parte mescolare il burro ammorbidito con lo zucchero fino a ottenere un impasto soffice. Versare poco a poco le uova sbattute, la farina, il latte, il lievito e mescolare. Trasferire metà dell'impasto in un'altra ciotola e in una delle due versare il cioccolato fuso. Imburrare e infarinare lo stampo e versare l'impasto chiaro e poi quello al cioccolato. A parte montare le 3 chiare a neve ferma. Setacciare la farina e unirla delicatamente ai rossi alternando con i bianchi. Stendere l'impasto su una teglia con carta da forno e cuocere a 180° per 10/15 minuti. Appena pronto arrotolarlo in un panno umido con tutta la carta. Sciogliere il cioccolato a bagnomaria e unire poco alla volta la panna a filo. Montare il burro e lo zucchero a velo con le fruste elettriche. Riaprire la pasta e spalmare sopra la ganache al cioccolato e poi la crema al burro. Richiudere la torta e decorarla a quadretti.
